Recipe Four: Sourdough Corn Dogs

The amount of sourdough discard that I have in my fridge is getting to be ridiculous, so I’ve been adding it into literally everything I bake. Muffins—they get some. Caramel butter bars? Yup they got some discard, too. I’m always looking for ways to incorporate discard. I love the flavor and it helps things from drying out in my experience.

It’s currently fair and festival season in my area, which means one thing. Fair food. When I think fair food, I think CORN DOGS. So I got to thinking, what can I do with my abundance of discard and the hotdogs we have in the freezer.

Pair them together, of course, and make homemade corn dogs! I chose to make mini corn dogs, but I’m sure you can do the same for regular. I’m no corn dog expert, however!

Ingredients:

1 package of hotdogs (I used some from our local meat market)

1 cup yellow cornmeal

1/2 cup flour for the batter

2 tablespoons flour for coating hotdogs

4 tablespoons sugar

1 1/2 teaspoon baking powder

1/8 teaspoon salt

1 egg

3/4 cup milk

1/4 cup sourdough discard (mine was a heaping 1/4 cup)

1 tablespoon melted butter, I used Kerry gold

1 teaspoon honey

Instructions:

1. Pat hot dogs dry with a paper towel. Cut them into pieces. Coat them with the two tablespoons of flour.

2. Whisk dry ingredients together in a bowl. (See ingredients above)

3. Whisk wet ingredients together in a separate bowl. (See ingredients above)

4. Slowly pour the wet ingredients into the dry ingredients. Be careful to not over mix. You’ll probably have some lumps, but make sure the dryness is mixed in. This reminded me of pancake batter.

5. Pour oil into a deep pan and place over medium high heat. You want it to reach 350 degrees.

6. Once oil hits 350 degrees, start coating the hotdog pieces in the batter and place in the oil. Fry in oil for about 2 minutes each side or until golden brown.

7. Serve with your favorite dipping sauce and store in fridge for about 3 days if they last that long.
